Thai Red Chicken Curry
- Living in St George, I have come to love the Thai restaurant here. It's amazing!!! So the other night I was craving it but didn't want to spend the money to go out to eat. Love the Internet that you can find almost any type of recipe online. This recipe is one I found at allrecipes.com and although it's not as spicy as what I could get at my favorite Benjia's, it was still pretty darn amazing and authentic. I loved all the veggies in it and even added sliced carrots and of course, bean sprouts, to make it even more yummy. And another love with Thai food, add chopped peanuts at the end. YUMMY!!!
- 2 tsp olive oil
- 1 lb skinless, boneless chicken breasts, cut into strips
- 1 tablespoon Thai red curry paste
- 1 cup sliced halved zucchini
- 1 red bell pepper, seeded and sliced into strips
- 1/2 cup sliced carrots
- 1 onion, quartered then halved
- 1 tablespoon cornstarch
- 1 (14 ounce) can light coconut milk
- 2 tablespoons chopped fresh cilantro
Directions
- Heat the oil in a large skillet over medium-high heat. Add the chicken pieces; cook and stir for about 3 minutes. Mix in the curry paste, zucchini, bell pepper, carrot and onion. Cook and stir for a few minutes.
- Dissolve the cornstarch in the coconut milk, then pour into the skillet. Bring to a boil, then simmer over medium heat for 1 minutes. Right before serving, stir in the cilantro.
**Did I mention this was super easy and quick to make? Plus, you could always do beef, pork, shrimp, etc instead of chicken. Love it!
Sesame Chicken and Noodles
We absolutely love this---Mel I cannot believe you guys didn't like it!
Ingredients:
1/3 cup rice vinegar
1/3 cup thinly sliced green onions
2 tbsp honey
1 tbsp soy sauce
1 tbsp grated fresh ginger (or throw in some of the powdered kind)
2 tsp Asian garlic-chili sauce
4-5 chicken breasts
whole wheat spaghetti noodles
3 tbsp toasted sesame oil
2 medium yellow, red, or orange sweet peppers, cut into bite size strips
cilantro
Cut into bite size pieces and cook chicken. I like to cook the ginger in with the chicken as well as with the chili garlic sauce (you can do without this if you don't have it--just adds some Asian spice flavor to it). In a bowl, mix together vinegar (I usually use half that amount because Ethan doesn't like strong vinegar-ish stuff), green onions, honey, soy sauce, and just for a better taste I usually add about 1/4 cup peanut butter. Mix in with the cooked chicken. Meanwhile, cook the pasta; when that is done, mix pasta with the sesame oil and then add the chicken mixture. Top with cilantro and peppers and enjoy!
**Just a side note: I cooked my peppers in with the chicken, which I liked better. I also added bean sprouts to the chicken at the end to make them soft because according to Ethan, if its any type of this food, I add bean sprouts. Love them!
Easy Beef Bing Sandwiches
This is definitely a favorite of ours and so so simple! You'll need:
1 lb roast beef (lunch meat)
cilantro
green onions
cabbage, shredded
wheat English muffins (or just bread)
Heat the roast beef in a pan with the green onions. I like to season it with garlic, sesame oil, and ginger (and red pepper flakes if you like things spicy). Toast the muffins or bread and top with warm meat, the cabbage and cilantro and ta-da--you're done!

Cashew Beef
thin cut beef, cut into strips
garlic
cornstarch
ground red pepper
ginger
water
cashews
rice
Add water, cornstarch, and seasonings and set aside. Cook beef and garlic. Add cornstarch mixture and stir while it boils and thickens. Add cashews and cook all together for a few minutes. Put over rice and there you have it....super simple and very yummy!
Healthy Dinners? Try this...
So we made this the other night and not only was it pretty darn healthy in my book, it was so good and simple! Here's what you need....
grape tomatoes
zucchini
broccoli
asparagus
sugar snap peas
onion
portobella mushrooms
feta cheese
Italian dressing
*any other veggies you want
So you chop everything up, stick it in a bag or bowl with the dressing, let marinate for at least 30 minutes, drain dressing, throw it in a pan to saute the veggies, dish up and add some feta cheese. Amazing!!!
